Hygienic Nature of Stainless Steel
Biological cleanliness increasingly has become more important, particularly with kitchen appliances, countertops and cabinet facings. Pathogens, or carriers of disease such as bacteria or a virus, can cause hundreds of thousands of cases of food borne illness annually. Surfaces in contact with food must be capable of being readily and reliably disinfected. Polymers, enamels, stone and other materials are easily cleaned when they are new. But, after normal use and aging, they wear down, which hinders their ability to be cleaned thoroughly. But not stainless steel. This is why hospital kitchens and fast food and other restaurants use only stainless steel in places where food is present. Bacterial retention is many times greater on surfaces that roughen with wear. Food contamination is not the only health issue to consider.
